  • 1 cup Breadcrumbs Use gluten-free if needed
  • 1/2 cup Parmesan Cheese Or swap with nutritional yeast for dairy-free
  • 1 Egg Can substitute with a flax egg
  • 1/4 cup Parsley Chopped, or use dill/cilantro
  • 2 cloves Minced Garlic Garlic powder is a quick substitute
  • 2 tbsp Lemon Juice Can use lime juice as alternative
  • 1 tsp Salt
  • 1 tsp Pepper
For the Creamy Avocado Sauce
  • 1 ripe Avocado Choose a perfectly ripe one
  • 1/2 cup Greek Yogurt Or dairy-free yogurt if you prefer
  • 2 tbsp Lime Juice Can substitute with lemon juice
  • 1 clove Minced Garlic Consider roasting for milder flavor

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine salmon, breadcrumbs, parmesan, egg, parsley, garlic, lemon juice, salt, and pepper in a bowl. Mix gently.
  3. Form the mixture into golf ball-sized meatballs and place them on the baking sheet.
  4. Bake for 15-18 minutes until golden brown and firm to the touch.
  5. Blend avocado, Greek yogurt, lime juice, and minced garlic in a blender until smooth.
  6. Serve the warm meatballs with creamy avocado sauce on the side.
