Step-by-Step Instructions
  1. In a medium saucepan, combine buffalo sauce, melted butter, garlic powder, and smoked paprika over low heat. Stir consistently for 2-3 minutes until smooth.
  2. Add shredded chicken to the buffalo sauce mixture and stir to coat. Let simmer for an additional 2-3 minutes.
  3. While the chicken mixture cools, rinse and pat dry lettuce leaves. Lay flat on a platter.
  4. Spoon buffalo chicken mixture into the center of each lettuce leaf.
  5. Top with diced celery, diced red onion, and crumbled blue cheese. Optionally drizzle with ranch dressing and sprinkle with parsley.
  6. Fold the lettuce around the filling and serve immediately.
