- In a medium saucepan, combine buffalo sauce, melted butter, garlic powder, and smoked paprika over low heat. Stir consistently for 2-3 minutes until smooth.
- Add shredded chicken to the buffalo sauce mixture and stir to coat. Let simmer for an additional 2-3 minutes.
- While the chicken mixture cools, rinse and pat dry lettuce leaves. Lay flat on a platter.
- Spoon buffalo chicken mixture into the center of each lettuce leaf.
- Top with diced celery, diced red onion, and crumbled blue cheese. Optionally drizzle with ranch dressing and sprinkle with parsley.
- Fold the lettuce around the filling and serve immediately.
