  • 1/2 cup applesauce or grated apple Mashed banana is a substitute

  • 1 tsp cinnamon Nutmeg or pumpkin spice can also be used
  • 2 tbsp honey or maple syrup Optional, adjust based on preference
  • 1 tsp baking powder No direct substitutes recommended

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
  2. Combine the cottage cheese, rolled oats, applesauce, egg, cinnamon, optional sweetener, baking powder, and salt in a mixing bowl.
  3. Let the mixture rest for 5 minutes to allow the oats to absorb moisture.
  4. Fill the mini muffin pan with the batter nearly to the top.
  5. Bake for 18-20 minutes until puffed and golden, and a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.
  7. Serve warm or store in an airtight container in the refrigerator.
