- Heat the oil in a large skillet over medium heat until shimmering, about 2 minutes.
- Add one diced onion to the skillet and sauté for about 5 minutes until translucent.
- Introduce the 3 minced garlic cloves and cook for an additional minute.
- Stir in 2 cups of roasted red peppers, 1 cup of vegetable broth, 1 teaspoon of smoked paprika, and 1 teaspoon of dried oregano. Season with salt and pepper. Let simmer for 10 minutes.
- Blend the sauce using an immersion blender until smooth, about 1-2 minutes.
- Reduce the heat to low, place the cod fillets in the skillet, and spoon sauce over them. Cover and cook for 8-10 minutes.
- Once the cod is cooked, garnish with fresh parsley and serve.
