  • 2 tablespoons Olive oil Can use any vegetable oil as a substitution.
  • 1 Onion Diced; yellow or red onions work well.
  • 3 cloves Garlic Minced; use fresh for best results.
  • 2 cups Roasted red peppers Can substitute with fresh roasted red bell peppers.
  • 1 cup Vegetable broth Can substitute with chicken broth.
  • 1 teaspoon Smoked paprika Regular paprika can be used in a pinch.
  • 1 teaspoon Dried oregano Fresh oregano can be substituted for a stronger taste.
  • Salt To taste.
  • Pepper To taste.
For the Cod
  • 4 fillets Cod Can substitute with tilapia or haddock.
  • Fresh parsley For garnish.

Method
 

Cooking Instructions
  1. Heat the oil in a large skillet over medium heat until shimmering, about 2 minutes.
  2. Add one diced onion to the skillet and sauté for about 5 minutes until translucent.
  3. Introduce the 3 minced garlic cloves and cook for an additional minute.
  4. Stir in 2 cups of roasted red peppers, 1 cup of vegetable broth, 1 teaspoon of smoked paprika, and 1 teaspoon of dried oregano. Season with salt and pepper. Let simmer for 10 minutes.
  5. Blend the sauce using an immersion blender until smooth, about 1-2 minutes.
  6. Reduce the heat to low, place the cod fillets in the skillet, and spoon sauce over them. Cover and cook for 8-10 minutes.
  7. Once the cod is cooked, garnish with fresh parsley and serve.
