- Preheat your oven to 350°F (175°C) and adjust your oven rack to the center position.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the white and light-green parts of scallions with a pinch of kosher salt and sauté for 2 to 3 minutes.
- Stir in the frozen corn and 1 tablespoon of Tajin seasoning into the skillet. Sauté for an additional 3 to 5 minutes.
- Reduce heat to low, then add ⅓-less-fat cream cheese and mix until creamy. Fold in light sour cream and ¾ cup crumbled Cotija cheese.
- Transfer the skillet to the oven and bake for 10 to 12 minutes until bubbly and heated through.
- Switch to broil, sprinkle remaining Cotija cheese over the dip, and broil for an additional 2 to 3 minutes.
- Let the dip cool slightly. Top with reserved scallions and cilantro. Serve immediately with tortilla chips or fresh veggies.
