  • 1 cup Light Sour Cream Greek yogurt can be a substitute.
For Topping
  • 1 cup Cotija Cheese Feta cheese makes a fine substitute.
  • ¼ cup Fresh Cilantro Optional, skip if cilantro is not preferred.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and adjust your oven rack to the center position.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the white and light-green parts of scallions with a pinch of kosher salt and sauté for 2 to 3 minutes.
  3. Stir in the frozen corn and 1 tablespoon of Tajin seasoning into the skillet. Sauté for an additional 3 to 5 minutes.
  4. Reduce heat to low, then add ⅓-less-fat cream cheese and mix until creamy. Fold in light sour cream and ¾ cup crumbled Cotija cheese.
  5. Transfer the skillet to the oven and bake for 10 to 12 minutes until bubbly and heated through.
  6. Switch to broil, sprinkle remaining Cotija cheese over the dip, and broil for an additional 2 to 3 minutes.
  7. Let the dip cool slightly. Top with reserved scallions and cilantro. Serve immediately with tortilla chips or fresh veggies.
