  • 1 tsp Cajun Seasoning Mix blend of spices including salt, black pepper, garlic powder, onion powder, oregano, thyme, paprika, chili powder
  • 2 tsp Olive Oil helps marinate the chicken and adds moisture
  • 25 g Grass-Fed Butter used for cooking the chicken
  • 15 g Grass-Fed Butter used for the sauce
For the Rice
  • 2 cups Uncooked Long-Grain Rice day-old rice is preferred
  • 1 Medium Red Onion
  • 4-5 Garlic Cloves chopped
For the Creamy Sauce
  • 250 ml Milk can switch to almond or oat milk
  • 150 g Light Cream Cheese may substitute with dairy-free cream cheese
  • 40 g Parmesan Cheese can replace with cheddar for a sharper flavor
Finishing Touches
  • Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Marinate the chicken breasts in a mixture of olive oil and Cajun seasoning for at least 30 minutes.
  2. Sear the marinated chicken in a hot cast iron skillet with butter for 5-7 minutes on each side until golden brown.
  3. Remove the chicken and let it rest for 5 minutes before slicing.
  4. In the same skillet, sauté chopped red onion and garlic for 3-4 minutes until translucent.
  5. Add cooked or day-old rice to the skillet, tossing to coat with leftover flavors for 2-3 minutes.
  6. In the skillet, whisk in the remaining butter, milk, and cream cheese over low heat until smooth.
  7. Serve rice topped with chicken and creamy sauce, garnished with fresh parsley.
