Cooking Instructions
  1. Place the boneless, skinless chicken breasts at the bottom of your Crock Pot.
  2. Layer the diced onion and minced garlic over the chicken.
  3. Pour in the chicken broth and diced tomatoes, ensuring everything is well combined.
  4. Sprinkle the Italian seasoning, followed by salt and pepper to taste.
  5. Cover the Crock Pot and set it to cook on low for about 6 hours.
  6. After cooking, remove the chicken breasts and shred them.
  7. Stir in the heavy cream and grated Parmesan cheese until smooth.
  8. Add the tortellini and fresh spinach, stir to combine, and switch to high heat for 30 minutes.
  9. Ladle the soup into bowls and garnish with fresh basil.
