- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or oil.
- In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the chopped red bell pepper and onion. Sauté for about 8 minutes until softened.
- In a large bowl, combine cooked rice, sour cream, cream of celery soup, chopped green chiles, corn kernels, and sautéed peppers and onions. Stir until well mixed.
- Fold in 1 cup of shredded Pepper Jack cheese into the mixture.
- Spread the mixture into the greased baking dish, smoothing it out evenly.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and sprinkle the remaining 1 cup of Pepper Jack cheese on top. Bake for an additional 10 minutes until golden.
- Allow to cool for 5-10 minutes before serving.
