Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or oil.
  2. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the chopped red bell pepper and onion. Sauté for about 8 minutes until softened.
  3. In a large bowl, combine cooked rice, sour cream, cream of celery soup, chopped green chiles, corn kernels, and sautéed peppers and onions. Stir until well mixed.
  4. Fold in 1 cup of shredded Pepper Jack cheese into the mixture.
  5. Spread the mixture into the greased baking dish, smoothing it out evenly.
  6. Cover the dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and sprinkle the remaining 1 cup of Pepper Jack cheese on top. Bake for an additional 10 minutes until golden.
  8. Allow to cool for 5-10 minutes before serving.
