Step-by-Step Instructions for Shrimp and Creamed Corn
  1. Heat a 12-inch skillet over medium heat, add olive oil to coat. Season raw shrimp with chili powder and salt, cook for 3-4 minutes until pink and opaque. Remove shrimp and set aside.
  2. In the same skillet, melt salted butter completely. Stir in chopped onions and sauté for about 3 minutes until soft. Add minced garlic, cook for another 2 minutes while stirring frequently.
  3. Introduce corn kernels and smoked paprika, stir well. Cook for 1-2 minutes until corn warms through.
  4. Pour in half-and-half, stirring constantly until mixture simmers. Allow to thicken for about 2 minutes. Add crumbled feta cheese, stirring until it melts and blends.
  5. Squeeze fresh lime juice into the skillet, return cooked shrimp, and stir gently to combine. Heat for an additional 2 minutes.
  6. Sprinkle remaining corn on top and garnish with lime slices and cilantro. Serve immediately, with extra chili powder or smoked paprika on the side if desired.

Notes

Cooking in batches helps prevent shrimp from being overcrowded in the pan, ensuring a more tender texture. Fresh corn is recommended for optimal flavor.
