  • 4 pieces Chicken Thighs Chicken breasts can also be used but may dry out.
  • 1 tbsp Ginger Freshly minced for best flavor.
  • 4 tbsp Soy Sauce No substitutions recommended.
  • 2 tbsp Sake Dry white wine can be used if sake is unavailable.
  • 1 tsp Salt Use kosher or sea salt.
For the Coating
  • 1 cup Potato Starch No substitutions recommended.
  • 1 cup Flour No substitutions recommended.
  • 2-3 cups Oil for Frying Neutral oil with high smoke point.
For the Ponzu Slaw
  • 4 cups Ponzu Slaw Mix Any shredded cabbage mix can be substituted.
  • 2 tbsp Ponzu Sauce Adjust for taste.
  • 1 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 1 tbsp Honey
  • 1 tbsp Sriracha Adjust for heat.
  • 1 tbsp Sesame Seeds
For Assembly
  • 4 buns Buns (Brioche/Potato) Alternative options include sandwich rolls or lettuce wraps.
  • 1 cup Kewpie Mayo Regular mayo is a substitute but may lack umami.
  • 1 each Lemon For squeezing on sandwich.
  • 1 tsp Lemon Zest
  • 1 pinch Salt
  • 1 pinch Pepper
For Garnish
  • 1 tbsp Black and White Sesame Seeds Optional, but recommended.

Method
 

Steps
  1. Marinate the Chicken: Combine chicken thighs with ginger, soy sauce, sake, and salt. Cover and refrigerate for 30 minutes to 2 hours.
  2. Prepare the Coating: Mix potato starch and flour in a bowl. Whisk until combined.
  3. Heat the Oil: Pour enough oil into a frying pan and heat to 350°F.
  4. Dredge the Chicken: Coat marinated chicken in the potato starch and flour mixture.
  5. Fry the Chicken: Fry chicken for 5-7 minutes until golden brown. Drain excess oil.
  6. Make the Ponzu Slaw: Combine slaw mix, scallions, ponzu sauce, vinegar, sesame oil, honey, sriracha, and sesame seeds in a bowl.
  7. Prepare the Buns: Toast buns lightly and spread Kewpie mayo inside.
  8. Assemble the Sandwich: Layer fried chicken, ponzu slaw, and lemon juice on the bun.
  9. Serve and Enjoy: Serve sandwiches immediately for the best flavor.
