  • 1 medium Cucumber Slice or julienne into thin strips.
  • 0.25 cup Red Bell Pepper Finely chopped, optional.
  • 0.25 cup Fresh Dill or Parsley Chopped, can substitute with basil or cilantro.
  • Salt and Pepper To taste.
  • 1 tablespoon Lemon Juice Apple cider vinegar can be a substitute.
  • 0.5 teaspoon Garlic Powder Optional, use fresh garlic for more flavor.

Method
 

Preparation Steps
  1. In a medium mixing bowl, combine 1 cup of cottage cheese, ¼ cup of freshly chopped dill or parsley, 1 tablespoon of lemon juice, and a pinch of salt and pepper. Stir until blended and creamy.
  2. Lay out your flour or spinach wraps on a clean surface. Spread a layer of cottage cheese filling onto each wrap, leaving an inch of space at the edges.
  3. Slice one medium cucumber and chop ¼ cup of red bell pepper if using. Place cucumber slices in the center of each wrap, along with optional veggies.
  4. Starting from the edge closest to you, carefully roll the wrap tightly while tucking in the sides. Continue rolling until you reach the opposite edge.
  5. Slice each wrap diagonally into bite-sized pieces and serve immediately, or wrap tightly and store in the fridge for up to 24 hours.
