Preparation Steps
- In a medium mixing bowl, combine 1 cup of cottage cheese, ¼ cup of freshly chopped dill or parsley, 1 tablespoon of lemon juice, and a pinch of salt and pepper. Stir until blended and creamy.
- Lay out your flour or spinach wraps on a clean surface. Spread a layer of cottage cheese filling onto each wrap, leaving an inch of space at the edges.
- Slice one medium cucumber and chop ¼ cup of red bell pepper if using. Place cucumber slices in the center of each wrap, along with optional veggies.
- Starting from the edge closest to you, carefully roll the wrap tightly while tucking in the sides. Continue rolling until you reach the opposite edge.
- Slice each wrap diagonally into bite-sized pieces and serve immediately, or wrap tightly and store in the fridge for up to 24 hours.
