- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, add egg whites and a pinch of salt. Whip on medium speed until foamy, then gradually add sugar until stiff, glossy peaks form.
- Gently fold in vanilla extract and chocolate chips with a spatula.
- Drop spoonfuls of meringue onto the prepared baking sheet, spaced about an inch apart.
- Place the baking sheet in the preheated oven and turn it off. Allow the cookies to sit in residual heat for 6-8 hours or overnight.
- After drying, remove cookies from the oven and cool on the baking sheet. Dust with powdered sugar if desired before serving.
