Ingredients
  

For the Shrimp
  • 1 pound Large Shrimp Feel free to substitute with chicken or tofu.
  • 2 tablespoons Olive Oil Enhances flavor.
  • 1 teaspoon Paprika Smoked paprika can be used for depth.
  • 1 teaspoon Garlic Powder Or use fresh garlic for stronger flavor.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper Optional for a spicy kick.
For the Corn Salsa
  • 1 cup Frozen Corn Fresh corn can be used when in season.
  • 1/2 cup Red Onion Diced.
  • 1 tablespoon Jalapeño Minced, optional.
  • 1/4 cup Cilantro Can substitute with parsley.
  • 1 tablespoon Lime Juice Can use lemon juice as a substitute.
For the Creamy Garlic Sauce
  • 1/2 cup Mayonnaise Creamy base.
  • 1/4 cup Sour Cream Greek yogurt can lighten it.
  • 2 cloves Minced Garlic Can substitute with garlic powder.
For Assembly
  • 2 pieces Avocado Sliced or mashed.
  • 2 tablespoons Sesame Seeds For garnish.
  • 2 tablespoons Green Onions Chopped, for garnish.

Method
 

Preparation
  1. In a mixing bowl, combine shrimp with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne pepper. Let marinate for 10 minutes.
  2. In a separate bowl, mix thawed corn, diced red onion, minced jalapeño (if using), chopped cilantro, and lime juice. Season with salt and stir well.
  3. Preheat grill to medium heat (375°F/190°C). Grill marinated shrimp for 2-3 minutes on each side until opaque and slightly charred.
  4. In a small bowl, whisk together mayonnaise, sour cream, minced garlic, chopped cilantro, lime juice, salt, and pepper until smooth.
  5. Divide corn salsa among bowls. Top with grilled shrimp, then add sliced or mashed avocado.
  6. Drizzle with creamy garlic sauce and sprinkle sesame seeds and chopped green onions.
