- In a large bowl, combine shredded cooked chicken with BBQ sauce, honey, and hot sauce until evenly coated. Set aside.
- Heat olive oil in a skillet over medium heat. Sauté diced onions and bell peppers for about 5 minutes until softened and fragrant. Season with salt and pepper, then remove from heat.
- On a tortilla, layer cheddar and mozzarella cheese, then spoon on the Honey BBQ chicken mixture and add the sautéed vegetables and cilantro. Fold the tortilla in half.
- In the same skillet, heat more olive oil over medium-high heat. Cook the quesadilla for about 3 minutes until golden brown, then flip and cook for another 3 minutes until the cheese melts.
- Remove from skillet and let rest for a couple of minutes before slicing into wedges. Serve warm.
