Ingredients
  

For the Chicken Mixture
  • 2 cups Cooked Chicken Shredded
  • 1/2 cup BBQ Sauce Store-bought or homemade
  • 1/4 cup Honey Or substitute with agave syrup
  • 1-2 tablespoons Hot Sauce Adjust for heat preference
For the Quesadilla Filling
  • 1 cup Cheddar Cheese Shredded; replace with pepper jack for spice
  • 1 cup Mozzarella Cheese Shredded
  • 1 medium Red Onions Diced
  • 1 medium Bell Peppers Diced; any color
  • 1/4 cup Fresh Cilantro Optional
For Assembly and Cooking
  • 4 large Flour Tortillas Preferably pliable
  • 2 tablespoons Olive Oil For cooking
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

Method
 

Steps
  1. In a large bowl, combine shredded cooked chicken with BBQ sauce, honey, and hot sauce until evenly coated. Set aside.
  2. Heat olive oil in a skillet over medium heat. Sauté diced onions and bell peppers for about 5 minutes until softened and fragrant. Season with salt and pepper, then remove from heat.
  3. On a tortilla, layer cheddar and mozzarella cheese, then spoon on the Honey BBQ chicken mixture and add the sautéed vegetables and cilantro. Fold the tortilla in half.
  4. In the same skillet, heat more olive oil over medium-high heat. Cook the quesadilla for about 3 minutes until golden brown, then flip and cook for another 3 minutes until the cheese melts.
  5. Remove from skillet and let rest for a couple of minutes before slicing into wedges. Serve warm.
