For the Sauce
  • 4 ounces Feta Cheese Use block feta for creaminess
  • 5 ounces Fresh Spinach Can use frozen if thawed
  • 2 tablespoons Olive Oil Extra virgin preferred
  • 2 cloves Garlic Freshly minced
  • 1 tablespoon Lemon Juice From half a lemon
  • 1 teaspoon Lemon Zest From half a lemon
  • Salt Adjust to taste
  • Black Pepper To taste

Method
 

Cooking Instructions
  1. Boil 8 ounces of pasta in salted water until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain pasta.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat, then sauté minced garlic for about 1 minute until fragrant.
  3. Add 5 ounces of fresh spinach, cooking for 2-3 minutes until wilted.
  4. Stir in 4 ounces of crumbled feta cheese along with lemon juice and zest, mixing until the feta begins to melt.
  5. Gradually add reserved pasta water to create a smooth sauce, using as needed for desired consistency.
  6. Adjust seasoning with salt and pepper, then gently fold in the cooked pasta until well-coated.
