  • 1 large Egg
  • 2 tablespoons Garlic Cloves Minced; omit for a more traditional taste.
  • 1 cup Cornflour Can use cornstarch as a substitute.
  • 3/4 cup All-purpose Flour
  • 2 tablespoons Sugar
  • 1/2 teaspoon Salt
  • 2 tablespoons Butter Melted.
  • 1 cup Milk Whole or skim.
For the Filling
  • 1 cup Shredded Mozzarella Cheese Cottage cheese is a lower-fat option.
  • 1/2 cup Jalapeños Sliced; optional.

Method
 

Instructions
  1. Blend Ingredients: Add fresh corn, egg, milk, butter, cornflour, all-purpose flour, sugar, salt, and minced garlic to a blender. Blend until smooth, about 1-2 minutes.
  2. Prepare Skillet: Heat a non-stick skillet over medium heat for 2-3 minutes, then add oil to coat the surface.
  3. Form Pancakes: Pour a portion of the batter onto the skillet, forming a round pancake about 4-5 inches in diameter.
  4. Cook: Cook for 2-3 minutes until bubbles form and edges turn golden brown; check the bottom for crispiness before flipping.
  5. Add Jalapeños: Place jalapeño slices on top of each pancake before flipping to infuse flavor.
  6. Cheese Filling: After flipping, add shredded mozzarella to one half and fold the other half over. Cook until cheese melts, about 2-3 minutes.
  7. Serve: Remove pancakes from the skillet, serve warm with your favorite toppings.
