- In a medium-sized bowl, mix together 1 cup of Bisquick and 1 scoop of protein powder. Gradually add in 2/3 cup of skim milk and a teaspoon of maple extract, if using. Whisk until smooth and slightly thick.
- Preheat a nonstick skillet over medium heat for about 2 minutes. Pour 2 tablespoons of batter to form small circles and cook for 2-3 minutes until bubbles form. Flip and cook for another 1-2 minutes until golden brown.
- In a separate greased skillet, crack 2 large eggs and scramble until edges begin to set, about 2 minutes. Stir gently, then cook undisturbed for another minute.
- Layer the cooked scrambled eggs and filling between two pancakes. Press gently to secure the filling in place and repeat for additional McGriddles.
