Step-by-Step Instructions for Cannoli Cookies
  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Whisk together the flour and sugar in a large mixing bowl until light and airy.
  3. In a separate bowl, mix the ricotta, egg, vanilla, and lemon zest until smooth.
  4. Gradually add the dry mixture to the ricotta mixture, stirring gently until a soft dough forms.
  5. Cover the dough and let it rest for 30 minutes at room temperature.
  6. Roll out the dough to about ¼ inch thick and cut into 2x3 inch rectangles.
  7. Combine remaining ricotta, chocolate chips, and pistachios for the filling.
  8. Place a spoonful of filling on each dough rectangle, fold, and seal the edges.
