- Prepare the Dough: In a large mixing bowl, cream together coconut oil, agave nectar, vanilla extract, and egg until smooth and fluffy.
- Combine Dry Ingredients: Whisk together whole wheat pastry flour, dry oats, salt, and baking powder in a separate bowl. Gradually add to the wet mixture.
- Chill Dough: Wrap the dough tightly in plastic wrap and refrigerate for at least 1 hour.
- Make Strawberry Filling: Cook strawberries with water over medium heat until softened. Blend until smooth.
- Shape Bars: Preheat oven to 350°F and roll out the chilled dough. Cut into 3x3 inch squares.
