  2. Simmer the mixture for an additional 2 minutes, stirring occasionally.
  3. Slice the red onions into thin rings (¼ inch thick) and transfer them into a clean mason jar.
  4. Pour the hot vinegar mixture over the sliced onions, ensuring they are fully submerged.
  5. Allow the jar to cool at room temperature for 15–20 minutes before sealing.
  6. Refrigerate the sealed jar for at least 24 hours to deepen flavors.
  7. Serve as toppings for tacos, salads, or grilled meats.
