Marinate and Prepare
- Cut chicken into bite-sized pieces. Whisk together soy sauce, coconut milk, garlic, brown sugar, lime juice, and pepper in a bowl. Add chicken, coat well, cover, and refrigerate for at least 1 hour.
- Soak wooden skewers in water for 30 minutes. Preheat grill to medium-high heat (about 400°F or 200°C).
Grilling
- Thread marinated chicken onto soaked skewers, about 4-5 pieces each.
- Place skewers on the grill. Cook for 5-7 minutes each side until cooked through with char marks.
Prepare Peanut Sauce
- In a bowl, combine peanut butter and coconut milk. Stir until smooth, then add Sriracha to taste.
Serve
- Transfer grilled skewers to plates, drizzle with peanut sauce, and garnish with chopped peanuts and cilantro.
