Ingredients
  

For the Chicken Marinade
  • 3-4 breasts Boneless, Skinless Chicken Adjust based on servings required
  • 3 cloves Fresh Garlic Minced
  • 1/4 cup Low-Sodium Soy Sauce
  • 1/2 cup Coconut Milk Also for peanut sauce
  • 2 tablespoons Brown Sugar Adjust to taste
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 tablespoon Sriracha Sauce Adjust based on spice tolerance
For the Peanut Sauce
  • 1/2 cup Peanut Butter Smooth or crunchy
  • 1/2 cup Coconut Milk Blends with peanut butter
  • 1 tablespoon Sriracha Sauce To taste
Optional Garnishes
  • 1/4 cup Chopped Peanuts For crunch
  • 1/4 cup Fresh Cilantro For garnish

Method
 

Marinate and Prepare
  1. Cut chicken into bite-sized pieces. Whisk together soy sauce, coconut milk, garlic, brown sugar, lime juice, and pepper in a bowl. Add chicken, coat well, cover, and refrigerate for at least 1 hour.
  2. Soak wooden skewers in water for 30 minutes. Preheat grill to medium-high heat (about 400°F or 200°C).
Grilling
  1. Thread marinated chicken onto soaked skewers, about 4-5 pieces each.
  2. Place skewers on the grill. Cook for 5-7 minutes each side until cooked through with char marks.
Prepare Peanut Sauce
  1. In a bowl, combine peanut butter and coconut milk. Stir until smooth, then add Sriracha to taste.
Serve
  1. Transfer grilled skewers to plates, drizzle with peanut sauce, and garnish with chopped peanuts and cilantro.
