  • 1 cup Butter at room temperature
  • 1 cup Granulated Sugar
  • 1 cup Dark Brown Sugar or light brown sugar
  • 3 large Eggs room temperature
  • 2 cups All-Purpose Flour or gluten-free blend
  • 1/4 cup Cornstarch
  • 1 teaspoon Spices Cardamom, Cinnamon, Ginger, Allspice, Nutmeg, Black Pepper
  • 1 teaspoon Baking Powder ensure fresh
  • 1/2 teaspoon Baking Soda ensure fresh
  • 1/2 teaspoon Salt
  • 1 cup Sour Cream or full-fat Greek yogurt
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract pure recommended
For the Frosting
  • 1 cup Butter softened
  • 2 cups Powdered Sugar
  • 1/2 cup Brown Sugar
  • 8 oz Cream Cheese full-fat recommended
  • 1 teaspoon Vanilla Extract pure preferred

Method
 

Preparation
  1. Preheat your oven to 170ºC (340ºF) and prepare two 20 cm (8-inch) round cake pans.
  2. Sift together the all-purpose flour, cornstarch, spices, baking powder, baking soda, and salt.
  3. Cream together the softened butter, granulated sugar, and dark brown sugar until light and fluffy.
  4. Incorporate eggs one at a time, mixing well after each addition.
  5. Gradually add half of the dry ingredients to the wet mixture, followed by sour cream and oil, then the rest of the dry ingredients.
  6. Divide the batter evenly between prepared pans and bake for 28-30 minutes.
  7. Cool the cakes in their pans for 5 minutes, then transfer to a cooling rack.
  8. Cream together the frosting ingredients until smooth and fluffy.
  9. Level the tops of each cake layer, spread frosting between layers and on top.
  10. Optionally, dust the top with cinnamon or garnish for presentation.
