  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1/4 cup Fresh Parsley chopped
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander optional
  • 1 tsp Salt sea salt recommended
  • 1/2 tsp Ground Black Pepper freshly ground is best
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt is a great choice
  • 2 tbsp Freshly Squeezed Lemon Juice or bottled as a quick alternative
  • 1 tbsp Olive Oil for grilling

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until blended.
  2. With damp hands, shape the mixture into oval-shaped koftas about the size of your palm.
  3. Preheat your grill to medium-high heat (about 400°F), and lightly brush the grill grate with olive oil.
  4. Place the shaped koftas on the grill and cook for 10-12 minutes, turning occasionally.
  5. In a separate bowl, mix the plain yogurt, lemon juice, and a pinch of salt until smooth.
  6. Once cooked, serve the koftas with the garlic yogurt sauce on the side.
