- Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs with melted butter until blended. Line a mini cupcake pan with paper liners and press the mixture into the bottom of each liner. Bake for 5-7 minutes until golden and cool completely.
- Beat softened cream cheese, sugar, and vanilla extract in a bowl using an electric mixer for 3-5 minutes until smooth. Fold in the heavy cream until fully incorporated.
- Bloom gelatin by sprinkling it over warm water. Microwave until dissolved, about 10 seconds. Cool slightly before pouring over the filled cookie crusts. Chill for about 2 hours.
- Roll out fondant on a surface dusted with powdered sugar. Create snowman shapes and add colored details. Let dry slightly.
