Preparation
  1. Begin by slicing your ripe bananas into 1/4 inch thick pieces and place them in a large mixing bowl.
  2. In the bowl with the sliced bananas, add granulated sugar, light brown sugar, melted butter, water, lemon juice, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt. Mix everything gently to coat the bananas evenly.
  3. In a separate bowl, whisk together the all-purpose flour, more granulated sugar, baking powder, baking soda, and salt.
  4. In a small bowl, whisk together the cold buttermilk, melted butter, and a splash of vanilla extract until smooth.
  5. Gently fold the wet ingredients into the dry mixture until just combined.
  6. Preheat your oven to 375°F (190°C).
  7. Pour the banana filling into a greased 9x13 inch baking dish and dollop your topping mixture over the bananas.
  8. Sprinkle turbinado sugar generously over the cobbler before placing it in the oven.
