- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, salt, sugar, baking powder, dried onion flakes, thyme, and paprika.
- Add the olive oil, water, and tomato puree to the dry mixture; stir until a sticky dough forms.
- On a floured surface, roll out the dough to about ⅙ inch (4mm) thickness.
- Using a 1-inch (2.5 cm) cookie cutter, cut the dough into circles.
- Transfer the cut crackers to the baking sheet and bake for about 10 minutes until the edges turn light golden.
- Turn off the oven, leaving the crackers inside for an additional 3-4 minutes to crisp up.
- Remove the baking sheet from the oven and let the mini pizza crackers cool for about 15 minutes.
