Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C). Gather all your ingredients and equipment.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent, about 5 minutes.
  3. Add diced carrots and celery, cooking for another 5 minutes until softened.
  4. Pour in heavy cream and stock, gently bring to a simmer over medium heat.
  5. Fold in lobster meat and frozen peas, simmer for an additional 5 minutes.
  6. Remove from heat, stir in thyme, lemon juice, salt, and pepper. Let filling cool slightly.
  7. Fit one pie crust into a 9-inch pie dish, pour in the lobster filling, and cover with second pie crust.
  8. Brush the top crust with beaten egg and cut vent slits into it.
  9. Bake for 30-35 minutes until golden brown. Let cool for 10-15 minutes before serving.
