- Preheat your oven to 400°F (204°C). Gather all your ingredients and equipment.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent, about 5 minutes.
- Add diced carrots and celery, cooking for another 5 minutes until softened.
- Pour in heavy cream and stock, gently bring to a simmer over medium heat.
- Fold in lobster meat and frozen peas, simmer for an additional 5 minutes.
- Remove from heat, stir in thyme, lemon juice, salt, and pepper. Let filling cool slightly.
- Fit one pie crust into a 9-inch pie dish, pour in the lobster filling, and cover with second pie crust.
- Brush the top crust with beaten egg and cut vent slits into it.
- Bake for 30-35 minutes until golden brown. Let cool for 10-15 minutes before serving.
