- Preheat your oven to 400°F (200°C).
- Peel and chop the carrots and apples into uniform, bite-sized pieces (about 1-inch chunks).
- In a medium-sized bowl, whisk together Dijon mustard, maple syrup, and olive oil until smooth.
- In a large bowl, combine chopped apples and carrots. Pour sauce over them and toss gently to coat.
- Spread coated apples and carrots on a parchment-lined baking sheet and roast for 25-30 minutes, stirring halfway through.
