  • 1 large Eggplant cut into one-inch cubes
  • 2 tablespoons Olive Oil

For the Miso Glaze
  • 1/4 cup White Miso Paste
  • 2 tablespoons Mirin or substitute with rice vinegar and sugar
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Fresh Ginger grated
  • 1 clove Garlic minced

  • to taste Sesame Seeds
  • to taste Chopped Green Onions

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) for roasting the eggplant.
  2. Cut the eggplant into one-inch cubes, place on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  3. Roast the eggplant for 20-25 minutes, flipping halfway through until golden brown.
  4. In a mixing bowl, whisk together the miso paste, mirin, soy sauce, honey, grated ginger, and minced garlic until smooth.
  5. Remove the roasted eggplant from the oven and brush the glaze over each cube evenly.
  6. Return the glazed eggplant to the oven for an additional 5-7 minutes until the glaze bubbles and caramelizes.
  7. Sprinkle with optional sesame seeds and chopped green onions before serving.
