Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Sear the boneless chuck roast for about 2-3 minutes per side.
  2. Combine the kosher salt, chili powder, garlic powder, onion powder, ground cumin, paprika, and black pepper in a small bowl.
  3. Transfer the seared chuck roast into the slow cooker. Rub the spice mixture all over the roast and pour ½ cup of low-sodium beef broth around it.
  4. Cook on low for 8-9 hours until the beef is tender.
  5. Shred the beef using two forks and mix it with the cooking juices.
  6. Squeeze lime juice over the beef and stir in the chopped cilantro before serving.
