Ingredients
  

For the Broth
  • 2 cups Mussels fresh, cleaned
  • 2 tablespoons Vegetable Oil can substitute with canola or avocado oil
  • 1 tablespoon Sesame Oil
  • 3 tablespoons White Miso
  • 4 cups Broth vegetable or chicken
  • 1 tablespoon Fish Sauce omit for vegetarian version
  • 2 tablespoons Mirin can substitute with white wine vinegar
  • 1/2 cup Cooking Cream or Soy Cream coconut cream is a dairy-free alternative
  • 2 tablespoons Unsalted Butter
For the Aromatics
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Grated Ginger
  • 1 medium Tomato chopped
For Toppings & Serving
  • 3 tablespoons Chives chopped
  • to taste Chili Oil
  • to taste Chili Pepper
  • 1 loaf Crusty Bread

Method
 

Preparation
  1. Clean the mussels under cold water and scrub shells thoroughly. Discard any that are open.
  2. Chop onion, garlic, and tomato. Mince garlic finely.
  3. Heat vegetable oil and sesame oil in a pan over medium heat. Sauté onion, garlic, and ginger for 3 minutes.
  4. Stir in white miso and chopped tomato, cooking for another 2 minutes.
  5. Add broth, fish sauce, and mirin. Bring to boil, then add cleaned mussels. Cover and simmer for 10 minutes.
  6. Remove from heat and stir in cooking cream and butter until melted.
  7. Serve with chives and a drizzle of chili oil. Pair with crusty bread.
