Step-by-Step Instructions for Butter Mochi
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 13-inch baking pan and line the bottom with parchment paper.
  3. In a large mixing bowl, combine the melted butter and sugar until smooth and glossy.
  4. Add the evaporated milk, coconut milk, vanilla extract, and eggs. Mix until fully combined.
  5. Fold in glutinous rice flour and baking powder until smooth, avoiding over-mixing.
  6. Pour the batter into the prepared pan and bake for about 60 minutes, until a toothpick comes out clean.
