For the Tapioca
  • 100 g Tapioca Pearls Provides chewy texture; substitute with smaller tapioca pearls if desired.
  • 1000 ml Water Essential for cooking the tapioca.
For the Watermelon Layer
  • 400 g Watermelon Main flavor component; 100g cut into cubes, 300g blended.
For the Smoothie
  • 400 ml Coconut Milk Adds creaminess; dilute with water if too thick.

Method
 

Step-by-Step Instructions
  1. In a medium pot, bring 1000ml of water to a rolling boil. Add the tapioca pearls, reduce heat, and simmer for 15–18 minutes.
  2. Drain the tapioca pearls and soak in ice water for 3 minutes to enhance chewiness.
  3. Cut 100g of watermelon into 1cm cubes and blend the remaining 300g with 400ml of coconut milk until smooth.
  4. Layer 50g of watermelon cubes and 2 tablespoons of soaked tapioca pearls in clear glasses.
  5. Pour the watermelon coconut smoothie into each glass until 90% full.
  6. Garnish with mint or watermelon slices and serve immediately.
