- In a medium pot, bring 1000ml of water to a rolling boil. Add the tapioca pearls, reduce heat, and simmer for 15–18 minutes.
- Drain the tapioca pearls and soak in ice water for 3 minutes to enhance chewiness.
- Cut 100g of watermelon into 1cm cubes and blend the remaining 300g with 400ml of coconut milk until smooth.
- Layer 50g of watermelon cubes and 2 tablespoons of soaked tapioca pearls in clear glasses.
- Pour the watermelon coconut smoothie into each glass until 90% full.
- Garnish with mint or watermelon slices and serve immediately.
