  • 2 tablespoons Olive oil Can substitute with melted butter.
Tzatziki Sauce Ingredients
  • 1 cup Plain Greek yogurt Can swap with non-dairy yogurt.
  • 2 cloves Garlic (minced) Fresh garlic is best.
  • 2 tablespoons Fresh dill Mint or oregano can be used.
  • 2 tablespoons Lemon juice Vinegar can substitute.
Toppings
  • 1 cup Gyro meat (strips) Grilled chicken or falafel is a tasty alternative.
  • 1 medium Red onion Can use shallots for a milder taste.
  • 1 cup Cherry tomatoes Adjust cooking time if using regular tomatoes.
  • 1 medium Bell pepper Use any color.
  • 1 cup Artichoke hearts Canned or frozen; rinse and drain.
  • 1 cup Portabella mushrooms Cremini or shiitake can work well.
Garnishing
  • 1 medium English cucumber Any cucumber variety can be used.
  • 1/2 cup Feta cheese Sprinkle over the top.

Method
 

Prepare the Dough
  1. Activate the quick rise yeast in warm water. In another bowl, mix flour and salt, then add olive oil and yeast mixture. Knead for about 10 minutes until smooth. Let rise in a greased bowl for 1 hour.
Preheat Oven
  1. Preheat oven to 375°F. If using a pizza stone, place it in the oven to heat for about 30 minutes.
Roast Toppings
  1. Slice cherry tomatoes and artichoke hearts. Toss with olive oil, salt, pepper, and parsley. Roast in the oven for 10-15 minutes.
Make Tzatziki Sauce
  1. Combine Greek yogurt, minced garlic, dill, and lemon juice in a bowl. Stir well and chill in the refrigerator.
Shape Dough
  1. Punch down the risen dough, shape it into a disk, and let it rise for 10-30 minutes. Roll out into desired pizza shape and thickness.
Assemble Pizza
  1. Spread Greek marinade over dough, then layer with tzatziki sauce, gyro meat, roasted veggies, feta cheese, and slices of red onion and bell pepper.
Bake
  1. Transfer Gyro Pizza to preheated pizza stone. Bake for 10-15 minutes until crust is golden and toppings are bubbling.
Garnish
  1. Slice cucumber and arrange on pizza. Drizzle additional tzatziki sauce over before serving.
