  • 1/2 cup Butter Use melted coconut oil for dairy-free.
  • 1 large Egg A flax egg is a vegan alternative.
  • 1 cup Jalapeno Peppers Use mild peppers if less heat is desired.
For the Filling
  • 4 slices Bacon Can substitute with turkey bacon or omit.
  • 4 oz Goat Cheese Can substitute with cream cheese.
  • 4 oz Cream Cheese
  • 2 tbsp Whole Milk Almond or soy milk can be used as alternatives.
  • 1 tbsp Fresh Chives Can substitute with green onions or omit.

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet.
  2. Combine flour, cornmeal, brown sugar, baking powder, and salt in a large mixing bowl.
  3. Stir in buttermilk, melted butter, and egg until just combined. Fold in chopped jalapeños.
  4. Drop batter onto the baking sheet, spacing about 2 inches apart. Bake for 12-15 minutes.
  5. Let cornbread cool on the sheet for 3-5 minutes before transferring to a wire rack.
  6. Mix goat cheese, cream cheese, and milk until smooth. Stir in bacon and chives.
  7. Spread filling on half of the cornbread rounds and top with the remaining rounds to assemble.
