- Clean the whole chicken and cut it into manageable pieces. Combine with salt, black pepper, garlic, onion, escallion, thyme, and pimento seeds in a bowl. Massage the marinade and let sit for at least 1 hour, or overnight.
- Heat oil in a Dutch oven over medium-high heat. Add marinated chicken pieces and brown for about 5-10 minutes until golden-brown.
- Pour in chicken stock and remaining marinade. Bring to a boil, reduce heat, cover, and simmer for 20 minutes until chicken is tender.
- Remove the lid, stir in ketchup and browning sauce. Reduce heat to medium-low and simmer uncovered for another 10 minutes until sauce thickens.
- Taste and adjust seasoning as needed. Serve hot alongside rice, Jamaican Rice and Peas, or fried plantains.
