Ingredients
  

For the Chicken
  • 1 whole Chicken broken into pieces
  • to taste Salt
  • to taste Black Pepper
For the Marinade
  • 1 medium Onion sweet or yellow
  • 3 cloves Garlic minced or grated
  • 2 stalks Escallion finely chopped
  • 1 tablespoon Fresh Thyme best when fresh
  • 1 tablespoon Pimento Seeds allspice berries
  • 2 tablespoons Dark Brown Sugar
For the Cooking Process
  • 3 tablespoons Browning Sauce
  • 1 whole Scotch Bonnet Pepper adjust to spice tolerance
  • 4 cups Low Sodium Chicken Stock
  • 2 tablespoons Soy Sauce optional
For the Vegetables
  • 1 cup Red Bell Pepper
  • 1 cup Green Bell Pepper
  • 1/2 cup Ketchup
Optional Ingredients
  • 2 leaves Bay Leaves can be omitted
  • to taste Homemade Seasoning Salt optional
  • to taste Paprika optional

Method
 

Step-by-Step Instructions
  1. Clean the whole chicken and cut it into manageable pieces. Combine with salt, black pepper, garlic, onion, escallion, thyme, and pimento seeds in a bowl. Massage the marinade and let sit for at least 1 hour, or overnight.
  2. Heat oil in a Dutch oven over medium-high heat. Add marinated chicken pieces and brown for about 5-10 minutes until golden-brown.
  3. Pour in chicken stock and remaining marinade. Bring to a boil, reduce heat, cover, and simmer for 20 minutes until chicken is tender.
  4. Remove the lid, stir in ketchup and browning sauce. Reduce heat to medium-low and simmer uncovered for another 10 minutes until sauce thickens.
  5. Taste and adjust seasoning as needed. Serve hot alongside rice, Jamaican Rice and Peas, or fried plantains.
