Step-by-Step Instructions
  1. In a food processor, combine the frozen peas, pea shoots (if using), grated Parmesan, olive oil, lemon juice, half a garlic clove, and a pinch of salt and pepper. Pulse until smooth yet slightly chunky. Set aside.
  2. Preheat your broiler to medium-high. Arrange ciabatta slices on a baking sheet, drizzle with olive oil, and toast under the broiler for 2-3 minutes on each side until golden brown.
  3. Remove toasted ciabatta and rub the remaining half clove of garlic on the tops while warm for garlic flavor.
  4. Spread a generous layer of the creamy pea topping on each toasted slice. Optionally, add more grated Parmesan and finish with lemon zest and pea shoots.
