Ingredients
  

For the Pasta
  • 12 oz Rigatoni Pasta can substitute with penne or cavatappi
For the Sauce
  • 2 tbsp Olive Oil preferably extra virgin
  • 1 lb Steak sirloin or ribeye recommended
  • 1 medium Onion diced, can substitute shallots
  • 1 medium Bell Pepper diced, any variety
  • 3 cloves Garlic minced, fresh preferred
  • 1 cup Heavy Cream can substitute with half-and-half
  • 1 cup Blue Cheese crumbled, gorgonzola or feta work as well
  • 1 tsp Dried Oregano Italian seasoning as an alternative
  • 1 tsp Salt adjust to taste
  • 0.5 tsp Black Pepper freshly cracked recommended
For the Topping
  • 1 cup Mozzarella Cheese shredded, cheddar can be used
  • 0.25 cup Fresh Parsley chopped, can substitute with basil or cilantro

Method
 

Cooking Steps
  1. Cook the rigatoni in salted boiling water until al dente, about 10-12 minutes. Drain and set aside.
  2. In a skillet, heat olive oil and sear the steak pieces for 3-4 minutes until browned. Remove and set aside.
  3. Sauté diced onion and bell pepper for 5 minutes until softened, then add minced garlic and sauté for another minute.
  4. Pour in heavy cream, deglaze the skillet, and mix in blue cheese, oregano, salt, and black pepper. Cook until melted and thickened, about 3-4 minutes.
  5. Return the steak to the skillet, add rigatoni, and stir to coat well with the creamy sauce.
  6. Preheat the oven to 375°F (190°C). Transfer the mixture to a greased baking dish, top with mozzarella, and bake for 15-20 minutes until bubbling.
  7. Garnish with parsley before serving. Enjoy!
