  • 2 tablespoons Olive Oil Or coconut oil for deeper flavor

  • 1 cup Canned Tomatoes Drained and chopped
  • 1 cup Coconut Milk Full-fat preferred
  • 1 large Onion Yellow or white
  • 2 cloves Garlic Fresh, minced
  • 1 tablespoon Ginger Grated
  • 1 teaspoon Ground Cumin
  • 1 tablespoon Red Pepper Flakes Adjust to taste
For Serving
  • 2 pieces Lime Wedges Freshly squeezed
  • 1 bunch Fresh Cilantro Optional garnish

Preparation Steps
  1. Season chicken breasts with salt and pepper on both sides, set aside for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until golden brown, then remove and set aside.
  3. In the same skillet, add chopped onion, sauté for 2-3 minutes until translucent.
  4. Stir in minced garlic and grated ginger, cooking for about 1 minute until fragrant.
  5. Add ground cumin and red pepper flakes, toast for about 30 seconds.
  6. Fold in canned tomatoes, cooking for 2 minutes until softened.
  7. Pour in coconut milk and stir to combine. Bring to a gentle simmer.
  8. Return chicken to the skillet, simmer for 20-25 minutes until cooked through.
  9. Plate chicken, spoon sauce over, and garnish with cilantro and lime wedges.
