For the Coconut Rice
  • 1 can Coconut Milk Can substitute with regular milk.
  • 1 cup Jasmine Rice Can substitute with basmati or long-grain rice.
  • 1 cup Chicken Broth Use vegetable broth for vegetarian option.

For Garnishing
  • 1/4 cup Fresh Cilantro Can substitute with parsley.

Method
 

Cooking Steps
  1. Preheat the oven to 375°F (190°C). Gather your ingredients.
  2. Whisk together maple syrup, soy sauce, sriracha, garlic, and chili flakes in a bowl to create the marinade.
  3. Pat chicken breasts dry, season with salt and pepper, and sear in olive oil for 2-3 minutes on each side in a skillet.
  4. Transfer seared chicken to a baking dish and pour the marinade over it.
  5. Bake chicken for approximately 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. Meanwhile, cook jasmine rice in a saucepan with coconut milk, broth, and salt, boil then simmer covered for 18-20 minutes.
  7. After cooking, let chicken rest for 5 minutes, then slice.
  8. Fluff coconut rice with a fork and serve alongside chicken, garnished with cilantro and lime juice.
