Method
 

Steps
  1. In a large bowl, combine the chicken thighs, soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Mix well until the chicken is fully coated, then cover and refrigerate for at least 30 minutes.
  2. While the chicken marinates, whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water in a separate bowl. Set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken thighs, cooking for about 5-7 minutes per side until golden brown.
  4. In the same skillet, add another tablespoon of olive oil, followed by onion, red and yellow bell peppers, minced garlic, and grated ginger. Stir-fry for 5-7 minutes.
  5. Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the mixture and let simmer for about 3-5 minutes.
  6. Plate the Spicy Sweet Chicken Diablo over cooked rice. Garnish with sliced green onions and sprinkle sesame seeds.
