Ingredients

For the Base
  • 1 cup Cottage Cheese Provides creaminess and protein; use ricotta for a different texture.
  • 1 cup Greek Yogurt Adds tanginess and extra protein; substitute with dairy-free yogurt for a vegan option.
  • 2 cups Strawberries (hulled & halved) Fresh strawberries offer the best taste, but thawed frozen ones work too.
  • 1 cup Almond Milk Any plant-based milk like coconut or oat milk can be used.
For the Flavoring
  • 1 teaspoon Vanilla Extract Use pure vanilla for the best taste.
  • 2 tablespoons Sugar Honey or maple syrup can be used as a natural sweetener.
For the Texture
  • 1/4 cup Chia Seeds Main thickening agent that creates the pudding texture.
For the Topping
  • 1 cup Strawberries (diced) Add just before serving to maintain crunch.

Equipment

  • Blender
  • mixing bowl
  • airtight container

  2. Pour the blended mixture into a mixing bowl, then sprinkle in the chia seeds. Stir vigorously for 1 minute to evenly distribute.
  3. Cover your container tightly and place it in the refrigerator. Allow to chill for at least 24 hours.
  4. After chilling, remove the pudding from the fridge and give it a gentle stir. Adjust with a splash of almond milk if too thick.
  5. Top your pudding with diced fresh strawberries just before serving for added flavor and texture.
