Step-by-Step Instructions
  1. In a bowl, whisk together the sweet chili sauce, red curry paste, fish sauce, and lime juice until well combined. Generously brush this mixture over both sides of the ribs, ensuring they are fully coated. Cover the ribs and refrigerate overnight for maximum flavor infusion.
  2. After marinating, place a saucepan over medium heat and add the remaining sweet chili sauce, peanut butter, red curry paste, fish sauce, and lime juice. Stir continuously for about 2-3 minutes until the sauce is smooth and well blended.
  3. Remove the ribs from the refrigerator and place them vertically in the slow cooker. Cook on low for 6-8 hours, or until the meat is tender and pulls away from the bone.
  4. Once the cooking time is up, preheat your broiler. Carefully transfer the ribs to a baking sheet, brushing them with half of the prepared BBQ sauce. Broil for 3-5 minutes until the sauce bubbles and caramelizes.
  5. Remove the ribs from the oven and sprinkle with the chopped peanuts and fresh cilantro. Serve the remaining BBQ sauce on the side for dipping.
