  • 1 cup Fresh Pineapple Fresh or thawed frozen chunks.
  • 3 tablespoons Soy Sauce Use tamari for gluten-free.
  • 2 tablespoons Rice Vinegar
  • 2 tablespoons Maple Syrup
For the Vegetables
  • 1 cup Bell Peppers Any variety works.
  • 1 medium Onion
  • 1 tablespoon Fresh Ginger Grated.
  • 3 cloves Garlic Minced.
For Cooking
  • 2 tablespoons Oil High-heat oil.

Method
 

Step-by-Step Instructions
  1. Press the extra-firm tofu between clean towels for at least 15 minutes to remove excess moisture.
  2. Cut the tofu into 1-inch cubes and toss gently in cornstarch until well-coated.
  3. Heat a skillet over medium-high heat and add oil. Add tofu cubes in a single layer and cook for 3-4 minutes until golden brown.
  4. Flip the tofu and cook for another 3 minutes until crispy. Remove from pan.
  5. In the same skillet, add more oil if needed, then toss in sliced bell peppers and onions. Sauté for about 5 minutes until softened.
  6. Add minced garlic and grated ginger, and stir continuously for about 30 seconds.
  7. Add pineapple chunks to the skillet and caramelize for about 2-3 minutes.
  8. Pour in the soy sauce, rice vinegar, and maple syrup mixture. Gently fold in the crispy tofu and stir for about 2 minutes.
  9. Serve over brown rice, quinoa, or cauliflower rice.
