Method
 

Combine Chia Mixture
  1. In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla until well blended. Allow the mixture to thicken, about 5-10 minutes.
Add Coffee
  1. Dissolve instant coffee granules in warm water in a small bowl and fold this mixture into the chia mixture.
Prep Cocoa Layer
  1. Mix cocoa powder with almond milk in a bowl until smooth, then combine with half of the chia pudding base.
Layering
  1. Layer the chia mixture and cocoa layer in serving glasses, aiming for at least two layers of each.
Add Toppings
  1. Top each glass with Greek yogurt and dust with cocoa powder. Optionally add dark chocolate shavings.
Chill
  1. Cover and refrigerate for at least 2-4 hours or preferably overnight to set.
Serve
