For the Salad
  • 2 pounds Yukon Gold or Red-skinned Potatoes Creamy texture and hold shape
  • 1 cup Fresh Parsley Roughly chopped
  • 1 medium Red Onion Sliced
  • 1 large Cucumber Diced
  • 2 medium Tomatoes Chopped
  • 1/2 cup Black Olives Pitted and sliced
  • 1 cup Feta Cheese Optional, crumbled
For the Dressing
  • 1/2 cup Extra-Virgin Olive Oil
  • 1 large Fresh Lemon Juice Juice of one lemon
  • 1 tablespoon Sumac Can substitute with lemon zest
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Method
 

Preparation Steps
  1. Wash and scrub the potatoes under cold water. Place them in a large pot, cover with cold water, and add salt.
  2. Bring to a boil over medium-high heat, then reduce to a gentle simmer, covering the pot. Simmer for 15-20 minutes until fork-tender.
  3. While potatoes cook, whisk together olive oil, lemon juice, sumac, salt, and black pepper in a small bowl.
  4. Drain the potatoes and let cool slightly. Cut into bite-sized cubes.
  5. In a large bowl, combine cubed potatoes, parsley, onion, cucumber, tomatoes, and olives. Add feta if using and mix gently.
  6. Pour dressing over salad and toss carefully until everything is coated.
  7. Taste and adjust seasoning with salt, pepper, or lemon juice.
  8. Let the salad rest for at least 30 minutes before serving.
