Ingredients
  

Dough Ingredients
  • 3 cups All-Purpose Flour Can substitute with gluten-free flour blend.
  • 1 tablespoon Active Dry Yeast Instant yeast can be used.
  • 1 tablespoon Sugar Coconut sugar or agave nectar can be used.
  • 1 teaspoon Salt
  • 1 cup Warm Water Ensure it’s warm, not hot.
  • 2 tablespoons Olive Oil Can substitute with melted coconut oil.
Filling Ingredients
  • 1 medium Onion Sweet onions work best.
  • 2 cups Spinach Fresh or thawed frozen spinach.
  • 2 cloves Minced Garlic Garlic powder is a substitute.
  • 1 tablespoon Nutritional Yeast Optional for cheesy taste.
  • 1 cup Marinara Sauce Use a thick, well-seasoned sauce.

Method
 

Dough Preparation
  1. In a medium bowl, combine warm water, sugar, and active dry yeast. Let rest until foamy.
  2. In a large mixing bowl, whisk together all-purpose flour and salt. Make a well and add the yeast mixture and olive oil. Stir until a dough forms.
  3. Transfer to a floured surface and knead for 10 minutes until smooth and elastic.
  4. Shape into a ball and place in an oiled bowl. Cover and let rise in a warm area for 1 hour.
Filling Preparation
  1. Heat olive oil in a skillet. Add sliced onion and cook until caramelized, about 20 minutes.
  2. Add spinach and minced garlic to the skillet and cook until spinach is wilted.
Roll Assembly
  1. Once the dough has risen, punch it down and roll it into a rectangle. Spread the filling and drizzle marinara on top. Roll tightly and slice into 1-inch pieces.
  2. Arrange rolls in a greased baking dish. Cover and let rise for another 30 minutes.
Baking
  1. Preheat oven to 375°F (190°C). Bake for 25-30 minutes until golden brown.

Notes

For best results, use a thick marinara sauce and roll tightly to maintain shape. Can be prepared a day in advance and refrigerated before baking.
