Dough Preparation
- In a medium bowl, combine warm water, sugar, and active dry yeast. Let rest until foamy.
- In a large mixing bowl, whisk together all-purpose flour and salt. Make a well and add the yeast mixture and olive oil. Stir until a dough forms.
- Transfer to a floured surface and knead for 10 minutes until smooth and elastic.
- Shape into a ball and place in an oiled bowl. Cover and let rise in a warm area for 1 hour.
Filling Preparation
- Heat olive oil in a skillet. Add sliced onion and cook until caramelized, about 20 minutes.
- Add spinach and minced garlic to the skillet and cook until spinach is wilted.
Roll Assembly
- Once the dough has risen, punch it down and roll it into a rectangle. Spread the filling and drizzle marinara on top. Roll tightly and slice into 1-inch pieces.
- Arrange rolls in a greased baking dish. Cover and let rise for another 30 minutes.
Baking
- Preheat oven to 375°F (190°C). Bake for 25-30 minutes until golden brown.
