Method
 

Directions
  1. Wash and peel 3-4 medium-sized fresh carrots. Use a mandolin slicer to shave them into long, thin ribbons.
  2. In a small bowl, combine 3 tablespoons soy sauce, 2 tablespoons rice vinegar, and 1 tablespoon honey or maple syrup. Whisk until blended.
  3. Pour the dressing over the carrot ribbons in the mixing bowl and gently toss to coat.
  4. Serve the salad immediately or let it sit for 5-10 minutes before serving. Garnish with sesame seeds.
