  1. Prepare the meat mixture by combining ground beef or lamb with grated onion, garlic, yogurt, and tomato paste. Add cumin, sweet paprika, oregano, salt, pepper, and optional cayenne. Mix until sticky, about 5-7 minutes.
  2. Divide the mixture into five equal portions. Roll one portion between parchment paper into a thin rectangle about 1/2 inch thick.
  3. Peel off the top parchment and roll the meat rectangle tightly into a log shape using the bottom parchment for support.
  4. Preheat oven to 200°C (400°F). Place kebab logs on a baking sheet lined with parchment and bake for 20-25 minutes until golden brown.
  5. Allow logs to rest for 5 minutes, then slice thinly for traditional kebab texture.
