Step-by-Step Instructions
  1. Make Watermelon Juice: Cut watermelon into chunks and blend until smooth. Strain to obtain ¾ cup of juice.
  2. Prepare the Mochi Mixture: Whisk glutinous rice flour, maple sugar, and tapioca starch. Add watermelon juice and avocado oil, stir until smooth.
  3. Cook the Mochi: Heat skillet, add avocado oil. Pour mixture in and stir for 3-4 minutes until thick.
  4. Shape the Mochi: Transfer to parchment, cool slightly, form into a square, and refrigerate for 1-2 hours.
  5. Dust and Cut: Dust with glutinous rice flour and cut into cubes, serve immediately.
